Lauki, also known as bottle gourd or doodhi, is a versatile vegetable that can be used in a variety of dishes. Ingredients:
– 1 medium-sized Lauki (Bottle gourd)
– 1 cup of thick curd (yogurt)
– 1-2 green chilies, finely chopped
– 1 tsp cumin seeds
– 1 tsp mustard seeds
– A pinch of asafoetida (hing)
– A few curry leaves
– 1 tbsp oil
– Salt to taste
– Chopped coriander leaves for garnishing
Instructions:
1. Peel the Lauki and cut it into small pieces. You can either grate the Lauki or finely chop it, depending on your preference.
2. Heat oil in a pan and add cumin seeds, mustard seeds, curry leaves, and asafoetida. Let them splutter for a few seconds.
3. Add the chopped green chilies and sauté for a minute until they are fragrant.
4. Add the chopped Lauki pieces to the pan and sauté for 5-7 minutes until they are cooked through and soft. Make sure to stir occasionally to prevent sticking.
5. Once the Lauki is cooked, remove it from the heat and let it cool down.
6. In a separate bowl, whisk the curd until it is smooth and creamy.
7. Add the cooked Lauki mixture to the curd and mix well. Add salt to taste and adjust the consistency by adding water if needed.
8. Garnish the Lauki raita with chopped coriander leaves and refrigerate for at least 30 minutes before serving.
9. Serve the Lauki raita chilled with rice or chapathi. It can also be served as a side dish with pulao or biryani.
